Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 small shallot, minced
- 4 cups mixed frozen vegetables (corn, carrots, green beans, anything you like!)
- ½ teaspoon dried dill or tarragon
- ¼ teaspoon salt
- ¼ teaspoon ground pepper
Preparation
- Heat olive oil in a large skillet over medium heat
- And the minced shallot and stir until soften (should take around 1 minute)
- Stir in frozen veggies
- Cover and cook, stirring occasionally, until veggies are tender (4-6 minutes)
- Stir in dill or tarragon, salt, and pepper
