Makes: 1 L (4 cups)

When kids don’t like sandwiches, salads are a great option. This easy to make salad can be changed up with your favourite vegetables and pasta shapes to suit everyone’s tastes.

Ingredients

Cooked short whole wheat pasta 875 mL 3 1/2 cups
Diced cooked chicken 375 mL 1 1/2 cups
1 large carrot, coarsely grated
Diced cucumber 250 mL 1 cup
Low fat Caesar salad dressing 50 mL 1/4 cup

Directions

  1. In a large bowl, combine pasta, chicken, carrot and cucumber.
  2. Drizzle with dressing and stir to combine well.
  3. Cover and refrigerate for up to 2 days.

Tip #1: To get 875 mL (3 1/2 cups) of cooked pasta, you will need 500 mL (2 cups) dried pasta.
Tip #2:
 Use your favourite shape like elbows, shells, radiatore or orrechiette pasta.
Tip #3:
 Try different vegetables like chopped peppers, celery, broccoli or cauliflower in the salad.
Tip #4:
For a vegetarian option use diced firm tofu for the chicken.
