Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 small shallot, minced
  • 4 cups mixed frozen vegetables (corn, carrots, green beans, anything you like!)
  • ½ teaspoon dried dill or tarragon
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper

Preparation

  1. Heat olive oil in a large skillet over medium heat
  2. And the minced shallot and stir until soften (should take around 1 minute)
  3. Stir in frozen veggies
  4. Cover and cook, stirring occasionally, until veggies are tender (4-6 minutes)
  5. Stir in dill or tarragon, salt, and pepper
  6. Enjoy!
