This is a wonderful salad! This is NOT Indian as in curry – but rather Indian, as in American Native.

4-6 servings

Incredients:

Salad

  • 4 cups cooked whole kernel corn, drained
  • 1 cup celery, sliced
  • 1 cup Tomato, diced
  • 1/4 cup green pepper, chopped
  • 1 sprig fresh dill

Avery Island Dressing

  • 3/4 cup salad oil
  • 1/4 cup vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon Tabasco sauce

Preparation

Salad:

  1. Combine corn, celery, tomatoes, green pepper and dill.
  2. Pour dressing over all.
  3. Let marinate about 1 hour before serving.
  4. Place in bowl lined with salad greens, such as lettuce leaves, if desired.
  5. Garnish with onion rings and dill.

Dressing:

  1. Combine all ingredients.
  2. Beat with rotary beater or shake well until well blended.
  3. Makes 1 cup.
